Detection Principle
总糖经酸水解能够将双糖彻底分解为具有自由醛基和酮基的还原糖,还原糖在碱性条件下能够与3,5-二硝基水杨酸反应生成棕红色氨基化合物,产物在540 nm处具有特征吸收峰,通过吸光值的变化即可定量检测总糖的含量。
